Get In My Belly-Mushroom Ravioli

Dinner Ravioli

I don’t normally post recipes but last night I made the most DELICIOUS meal and wanted to share…especially because the main course was under 300 calories and took about 12 minutes total to make.

Let’s start with the salad.

I am a HUGE fan of 2 Amy’s mixed green salad. I dream about it. My mouth starts watering when I think about it. It’s so simple (I still haven’t completely nailed it but yesterday I came close)

Arugula

Endive

Radishes (I added them…they aren’t on the 2 Amy’s Version)

Add Red Wine Vinegar, Olive Oil, Lemon, Salt & Pepper

Mix it around and VOILA! It’s done.

The Main Course- Wild Mushroom Ravioli with Oven Roasted Tomatoes

I picked up this already ready already package of Wild Mushroom Ravioli in the refrigerated section (near the cheese). It comes with a Parmesan and Herb Packet as a sauce but I did my own thing (Chef BoyarBrooke at her best)

Take the Mushroom Packet and Put it in boiling water for 5 minutes

Cut up a tomato (I did one roma tomato and a few of the golden aka yellow cherry tomatoes), Place them in a pan, drizzle olive oil, add salt and pepper a little bit of fresh basil, and bake them in the oven to your liking.

Plate the ravioli, add the tomatoes, and VOILA! It’s done.

*I finished off the evening with my 2nd favorite food (mom’s lasagna is first on the list)…CADBURY MINI EGGS! It was the first mini egg of the season, which is always the best!
