I’ve been on the HCG Diet with Low Country Plastic Surgery Center for the last 8 days and it surprisingly hasn’t been all that bad. I haven’t been hungry and I definitely feel a lot healthier. I’ve had more energy, I’m thinking more clearly, and I just feel good. Food is not something I think about right now because the foods I’m eating are really just to fuel my body…with that being said, I miss my wine and I miss enjoying food.
Yesterday I came upon the Cauliflower Pizza option and DING DING DING! with a few modifications (to make it an HCG recipe) I am able to indulge on one of my favorite foods…PIZZA!
I’ve had people ask, “Does it taste as good as pizza?”
Nonstick Cooking Spray
2.50 cup(s), Cauliflower – Raw
1 egg, Large Egg
1 1/3 Cup, Mozzarella Flavor Shreds (Go Veggie)
1 tbsp of Mrs. Dash’s Tomato Basil Garlic Seasoning
1/4 cup(s), Tomato Paste, 100% Natural
1 packet of Stevia
1 cup Grape Tomatoes (cut in half)
2 clove(s), Garlic – Raw
1/4 teaspoon, Crushed Red Chili Pepper Flakes
3/4 cup Whole Green Bell Pepper
1/4 cup(s), Onions – Raw
Preheat the oven to 425 degrees and place parchment paper on a pizza pan.
Grind the cauliflower in a food processor until you have 2 cups of fine grated cauliflower (you can use a grater as well but it takes forever).
Place in a large bowl and microwave for seven to eight minutes. Remove from the microwave and let cool.
Mix in the egg, 1/3 cup of Go Veggie Mozzarella Cheese Shreds, and Mrs. Dash’s Tomato Basil Garlic Seasoning with the Cauliflower.
Once combined, pat into a 10-inch round on the prepared pizza pan. Spray lightly with nonstick spray and bake for 10 to 15 minutes, or until golden.
For the Sauce-
Put a 1/2 a cup of water in a saucepan, add chopped garlic and tomato paste. Stir until a saucy consistancy. Add water as often as needed but don’t make it too watery because you don’t want it to drown your pizza crust. Sprinkle in a little of Mrs. Dash’s seasoning and one packet of Stevia to sweeten it up a little.
Top the pizza with the sauce, basil, 1 cup mozzarella, grape tomatoes, green peppers, onions and red pepper flakes.
Bake in the oven until melted and bubbly, another 10 minutes.
